Introduction
This ONLINE course is aimed at all food handlers and is recommended by the local Environmental Health Department.
This course work is to be completed fully online – with access to online materials. Candidates will be provided with an assessment date and time via Microsoft Teams (or an assessment can be arranged at one of campuses). It is essential that candidates can access the video conferencing platform – Microsoft Teams. An invite to the assessment will be emailed in advance.
REHIS E-learning is supported by internet explorer (version 8 +), google chrome or firefox, to be able to complete the course you will need access to one of the above.

Course Content
The online REHIS Elementary Food Hygiene @ SCQF Level 5 course covers the following:
- Introduction to Food safety
- Microbiological Hazards
- Food poisoning and its control
- Contamination hazards and control
- HACCP from delivery to service
- Personal Hygiene
- Food premises and equipment
- Food pests and control
- Cleaning and disinfection
- Food safety enforcement.
Assessments
A 30 minute exam to be undertaken under controlled conditions, online, via Constructor Proctor. A working Webcam, microphone, speaker and good internet connection is essential. You will be sent instructions via email in advance.
30 question multiple choice. You must achieve 60% to pass, i.e. minimum 18/30. Assessments will be marked, and if successful, a REHIS Certificate will be issued.
In order to be able to complete the assessments, you must have access to a laptop, pc with webcam, microphone and internet access. The exam will use ‘constructor Proctor’. Please see below steps to ensure you are able to take the exam:
SETTING UP YOUR EXAM
Check your computer:
Use a Laptop or Desktop (Windows, Mac, or Linux) – Tablets and phones may not work.
Update Your Browser – Use the latest version of Google Chrome or Microsoft Edge.
Check Your Internet – Ensure a stable connection (Wi-Fi or wired) with at least 1 Mbps speed
Test Your Equipment:
Webcam – Ensure it’s working and not blocked.
Microphone – Test that it can record sound.
One Screen Only – Disconnect extra monitors if you have them.
Get Your System Ready:
Give Permissions – Allow your browser to use the webcam and microphone.
Close Unnecessary Apps – This helps prevent slowdowns.
Plug In Your Laptop – Avoid running into battery issues during the test.

To access support with the fees you must register with DG Works. Just follow the link or use the QR code. If you are already registered, please contact your Employment Key Worker for next steps.
Once you have completed the registration form and your eligibility has been checked someone from DG Works (part of Dumfries and Galloway Council) will contact you to ask you to provide the following evidence:
- Reside in Scotland (e.g. evidence address)
- Working Age (e.g. birth certificate)
- Right to Live & Work in the UK (e.g. evidence of benefits)
